Homemade Liberian Rice Bread: A Simple Recipe.

Ingredients:

  • 2 cups rice flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup sugar
  • 2 teaspoons nutmeg
  • 10 red bananas
  • 3 cups milk
  • 4 eggs
  • 1 1/3 cups vegetable oil
  • 2 teaspoons vanilla extract

Instructions:

  1. Preheat your oven to 400°F (200°C). Grease your baking pan or line it with parchment paper, or traditionally, use banana leaves.
  2. In a large mixing bowl, combine the rice flour, baking soda, baking powder, salt, sugar, and nutmeg.
  3. In a separate bowl, mash the red bananas until smooth.
  4. Add the mashed bananas, milk, eggs, vegetable oil, and vanilla extract to the dry ingredients. Stir until thoroughly blended.
  5. Pour the batter into the prepared baking pan, spreading it evenly.
  6. Bake the mixture in the preheated oven for about 20-30 minutes until it’s color turn brown, or until a toothpick inserted into the center and comes out clean.
  7. Once baked, remove the rice bread from the oven and allow it to cool in the pan for a few minutes.
  8. Serve the Liberian rice bread warm or at room temperature. Enjoy your homemade treat!
