Homemade Liberian Rice Bread: A Simple Recipe.
Ingredients:
- 2 cups rice flour
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup sugar
- 2 teaspoons nutmeg
- 10 red bananas
- 3 cups milk
- 4 eggs
- 1 1/3 cups vegetable oil
- 2 teaspoons vanilla extract
Instructions:
- Preheat your oven to 400°F (200°C). Grease your baking pan or line it with parchment paper, or traditionally, use banana leaves.
- In a large mixing bowl, combine the rice flour, baking soda, baking powder, salt, sugar, and nutmeg.
- In a separate bowl, mash the red bananas until smooth.
- Add the mashed bananas, milk, eggs, vegetable oil, and vanilla extract to the dry ingredients. Stir until thoroughly blended.
- Pour the batter into the prepared baking pan, spreading it evenly.
- Bake the mixture in the preheated oven for about 20-30 minutes until it’s color turn brown, or until a toothpick inserted into the center and comes out clean.
- Once baked, remove the rice bread from the oven and allow it to cool in the pan for a few minutes.
- Serve the Liberian rice bread warm or at room temperature. Enjoy your homemade treat!
