Liberian Gravy Soup, often simply referred to as “Gravy,” is a beloved dish in Liberian cuisine. It’s a rich and flavorful stew typically made with meat, onions, tomatoes, and a variety of spices. Gravy is commonly served with rice or other starchy sides like fufu or cassava.
Here’s a basic recipe for Liberian Gravy Soup:
Ingredients:
1-2 pounds of meat (chicken, beef, or fish), cut into bite-sized pieces
1 cup cooking oil
1 medium onion, finely chopped
2-3 tomatoes, diced
2-3 cups water or chicken broth
Maggi cube, Salt and pepper
Hot peppers (such as Scotch bonnet or habanero), finely chopped, for added heat
Instructions:
Heat the cooking oil in a pot over a medium heat.
Add the chopped onions to the pot and sauté until they are soft and translucent.
Add the diced meat to the pot and cook until it’s browned on all sides.
Once the meat is browned, add the diced tomatoes to the pot and cook for a few minutes until they begin to soften.
Pour in the water or chicken broth, ensuring that the meat and vegetables are fully submerged.
Cook on low heat and keep stirring after few minutes until the water reduce a little and your Gravy is ready to be serve with rice, cook patoto, cook cassava, cook plantain or bread.
