Here’s a simple recipe to make Liberian Palava Sauce Soup:

Ingredients:

2 or 3 bunch of Jute leaves (known as “palava” leaves) chopped
Fish (smoked or fresh), beef, or chicken
1 cup palm oil
1 onion chopped
Hot peppers chopped
Few crayfish or dried shrimp
2 Maggi cube
Salt
Black pepper
2 to 3 cup water

Instructions:

If using fish, clean and cut into pieces and season.

If using beef or chicken, cut into pieces, season with salt.

In a large pot, Add the fish, beef, or chicken and cook until browned. Remove the cooked fish, beef or chicken from the large pot and set it aside for later.

In the same pot, add the palm oil and heat over medium heat. Add the chopped onions and sauté for few minutes until they become translucent.

Add hot peppers, and cook for another 1-2 minutes, stirring frequently.

Stir in the diced tomatoes and cook for about 5-7 minutes, allowing the tomatoes to break down and meld with the other ingredients.

Add the chopped jute leaves to the pot. Stir well to combine and cook for about 5 minutes until the leaves wilt down.

Add the cook (fish, beef, or chicken) to the pot. Add the crayfish or dried shrimp if using.

Crumble the bouillon cubes into the pot and season with salt and black pepper to taste.

Add 1-2 cups of water or stock to the pot, depending on how thick you want the sauce. Stir well.

Reduce the heat to low, cover, and let the sauce simmer for about 20-30 minutes, allowing the flavors to meld together. Stir occasionally to prevent sticking.

Taste the sauce and adjust seasoning as needed. You can add more salt, pepper, or bouillon cubes according to your preference.

Serve: Serve the Palava Sauce hot over rice or fufu.

Tips and Variations:

Vegetarian Option: Skip the meat or fish and use vegetable stock to make a vegetarian version. You can also add mushrooms or tofu for additional protein.

Greens: While spinach is commonly used, you can experiment with other greens like collard greens, kale, or even Swiss chard if you can’t find jute leaves.

Texture: If you prefer a thicker sauce, let it simmer longer to reduce the liquid. Conversely, add more water or stock if you like it soupier.

Serving Suggestions: Palava Sauce is traditionally served with starchy sides like rice, fufu. It can also be enjoyed with yam, plantain or cassava.

Heat Level: Adjust the amount of hot peppers to your taste. You can also use milder peppers if you prefer a less spicy dish.
